Benoît Chassaing's research centers on how diet and the gut microbiota intersect in intestinal inflammation. His most-cited work established a standardized DSS-induced colitis protocol in mice, a methodological cornerstone cited over two thousand times, and demonstrated that dietary emulsifiers reshape the mouse gut microbiota to promote colitis and metabolic syndrome. He extended this line to humans, showing that dietary emulsifiers directly alter human microbiota composition and gene expression ex vivo, and later ran a randomized controlled-feeding trial of carboxymethylcellulose confirming detrimental effects on the gut microbiota and metabolome. A parallel thread concerns fecal lipocalin-2 as a non-invasive biomarker of intestinal inflammation, alongside reviews of the commensal microbiota and enteropathogens in inflammatory bowel disease and the microbiota-liver axis in hepatic disease. Beyond his lead-author work, Chassaing contributed as a middle author to studies on microbiota-dependent bone loss prevented by probiotics and on fiber-mediated nourishment of gut microbiota protecting against diet-induced obesity, the latter involving Andrew D. Patterson. His more recent senior-author reviews synthesize evidence on ultra-processed foods and food additives in gut health and disease, connecting epidemiological patterns to mechanistic insight. No software, datasets, patents, or grants are indexed beyond his publications. Taken together, the arc runs from methodological and biomarker foundations through mechanistic dietary-emulsifier work to translational and review-level synthesis of how food additives shape host-microbe interactions.
